The idea of meal prepping for a whole week is scary to many people I know!
Cooking a week’s worth of full meals sounds like it would take an entire Sunday right!?
It doesn’t have to be scary or complicated!
Because you don’t need to cook a week’s worth of meals when you meal prep!
Focus on prepping about a week’s worth of PROTEIN!
Then, during the week build the rest of the meal around that protein source based on the time you have and what you are in the mood for!
This weekend I cooked 2 pounds of ground beef and seasoned it with some everything bagel seasoning. I portioned it out into single servings and had one serving over a salad on Monday night for dinner.
Today, I will add a little taco seasoning to it and roll it up into a low carb tortilla!
On Sunday, I also made my tried and true crockpot shredded chicken!
(The easiest way to prep chicken is in a crockpot!)
You literally put frozen chicken breast in the crockpot with a ¼ a cup of water and some taco seasoning and some powdered ranch dressing seasoning or whatever seasoning you love!
Cook the chicken on high until it shreds up!!
Then portion out your chicken into single serving meal prep containers.
Yesterday, I had a serving of my crockpot chicken for lunch with a cup of rice.
Today, I had it for lunch with some frozen green beans.
Later this week I will have it over some shredded lettuce with salsa for a shredded chicken taco salad!
