So it is the Sunday AFTER Thanksgiving.
You have no doubt spent the weekend enjoying Holiday meals and desserts as well as
Holiday LEFTOVER meals
HOLIDAY leftover desserts ….
Right now you may be feeling sluggish, bloated, and BLAH!!!
Right now you are in no way motivated to think about food and what you will be eating this week!
That is how I felt yesterday.
The last thing I wanted to do was think about meal prep for the week ahead.
Nothing sounded good.
Not leftover turkey, not shredded crockpot chicken, and definitely not ground turkey!
Sooooo, I tried to come up with some other protein choices that I could easily pair with a salad or other green veggie in the week ahead.
After much thought, I came up with CHICKEN THIGHS…
Grass fed beef steaks from my favorite butcher – Bolyards Meat & Provisions!
The chicken thighs I plan to season with a rub of chilipowder, salt, pepper, paprika, garlic and cinnamon!
I will then bake them on a cookie sheet covered with parchment paper at 375 until their juices run clear. I will be able to enjoy these all week with a salad or green veggies of my choice.
The steaks I cooked last night in a hot cast iron skillet with a little olive oil. They turned out perfect. I sliced them so they are ready to go for the week.
SO even though at the time I was not motivated to meal prep or even think about eating….
By taking the first step and forcing myself to go to the store and buy something, I was half way there.
Figuring out how to prepare the proteins didn’t take much effort at all. I simply went back to a tried and true method that I have done many times before!!!
I knew that this week was going to be super busy AND I will be working four to midnight most of the days so I have to have meals prepared to bring to work.
YOU will also be busy this week and will be much much better off if you at least have a protein source prepped!!
Don’t let the rush of the holidays completely derail EVERYTHING you have been working on this year!!!
The “holidays” are not an excuse to allow yourself to stop doing all the things you have been doing to stay on track up to this point.
MEAL PREP INCLUDED
So….. NO EXCUSES.
Figure out what you want to eat this week and get it PREPPED!
Find a protein and then get some veggies to go with it that can be easily heated up in a pinch. Birds Eye Frozen Veggie steamers are my favorite if I am not prepping fresh veggies ahead of time.
So there you go. I know you feel sluggish, tired, and bloated and the last thing you want to think about is food.
But you know what? Too bad.
Do it anyway.
You will thank yourself for it! Trust me!!!
